Holiday Recipe
If you’re like me, you’re not really that good of a baker. In fact, maybe this is your first time baking sugar cookies from scratch. Don’t worry, it was my first time, too. However, this easy recipe will give you plenty of tasty cookies to share with your friends and family this holiday season (or maybe just keep them all for yourself).
First, you’ll need to gather the materials. You will need 1 and a half cups of softened butter, 2 cups of white sugar, 4 eggs, 1 teaspoon of vanilla extract, 5 cups of all purpose flour, 2 teaspoons of baking powder, and 1 teaspoon of salt.
After you have all of these materials, cream together the softened butter and sugar in a large bowl until it becomes smooth. Afterwards, beat in the eggs and vanilla. I personally found that it was easiest to beat the eggs and vanilla together separately before adding them to the butter and sugar. Then, stir in the flour, baking powder, and salt. To make this step easier, I added flour half a cup at a time, in order to make sure it wouldn’t become too difficult. Then you cover the dough and chill it in the refrigerator for at least one hour.
When you are ready to bake the cookies, preheat your oven to 400 degrees. Roll out the dough so that it is flat and about ¼ of an inch to ½ of an inch thick. You can then cut the dough into whatever shapes you want to. Place them about 1 inch away from each other onto cookie sheets, and bake for 6-8 minutes. When you are done, let them cool, and you have delicious sugar cookies! To add extra flair to your cookies, you can also make icing for them. For this icing, you will need 1 cup of powdered sugar, 2 teaspoons of milk, 2 teaspoons of light corn syrup, and ¼ teaspoon of vanilla extract. You can also use food coloring if you want to decorate it. I personally chose red and green to stick with the holiday theme.
To begin, stir together the powdered sugar, milk, corn syrup, and vanilla until it is smooth. When I first did this at home, I added in water as well because it was too thick and wasn’t all mixing together, however feel free to skip this step if you feel you don’t need it. Then, split the icing into different bowls and mix in the food coloring that you want. To conclude, use the icing to decorate your sugar cookies however you like!
